Ingredients

For the oaty layer:

  • 1 tablespoon chia seeds
  • 1/4 cup water
  • 2 cups oats, divided
  • 1 cup raw cashews
  • 1 cup apple puree
  • 2 tablespoons maple syrup
  • 1 tablespoon coconut oil
  • 1 tablespoon sunflower seeds
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1 teaspoon salt

For the filling:

  • 1 1/2 cups dried dates
  • 1/2 cup dried cherries
  • 2 tsp cinnamon
  • 1/2 cup apple purée
  • 1/4 tsp salt

Preparation

Preheat the oven to 175°C.

In a small bowl mix together the chia seeds and water then leave them to form a gel for 15 to 20 minutes, stirring a couple of times to prevent clumps forming.

To make the oaty crust: In a blender or food processor, combine chia seed mixture, 1 cup of oats, cashews, maple syrup, apple purée, coconut oil, sunflower seeds, vanilla, baking powder and salt. Blend until smooth. Fold the remaining 1 cup of oats into the mixture but do not process.

For the filling: Now combine dried dates, dried cherries, cinnamon, apple puree and salt in a food processor, blend until thoroughly combined.

Spread half of the crust mixture on the bottom of a lined loaf tin.

Layer the filling on top, followed by another layer of the crust mixture. Smooth the top and bake for 25 to 30 minutes, it should be golden and firm when pressed.

Lift out and leave to completely cool on a wire rack then slice into squares.
