Better Nut Butter

Who loves a good nut butter?! They're full of healthy fats and wonderfully mineral rich, come with a does of plant protein & a flash of fibre too.

When it comes to purchasable products however there is a range to a be aware of. Don't go for roasted nuts/seeds as heating equals oxidised fats which we don't want. Also be aware of the unnecessary addition of sweeteners & oil.

The simplest & tastiest way to ensure brilliant butter will always be to make your own. It'll also save you a small fortune. As always, I've got some handy nutrition & flavour optimising tricks up my sleeve when it comes to this recipe, like using innately sweet coconut & the dreamy creaminess of cashews with a vairety of other nuts to get the most micronutrients you can per serving.

Make 1 large jar.

Ingredients

  • 1 heaped cup raw coconut chips
  • 1 heaped cup raw cashews
  • 1 cup mixed hazelnuts, walnuts & almonds
  • 2 tablespoons collagen (I get mine from Bare Biology)
  • Optional - 1 teaspoon vanilla, raw cacao or cinnamon powder

Preparation

Blend the coconut chips in a food processor until you have a rough paste. Then add the rest of the nuts, blend until smooth. Scrape down the sides at regular intervals to ensure an even blend.

Add the collagen & any extras, blend these in & decant into jars.
