Mix everything except the chocolate together. Then chop & mix that through.
You can freeze the dough at this point for up to 3 months.
Roll into balls, arrange on a lined tray & flatten slightly. Bake at 170°C for 10 minutes.
Leave to cool on the tray for 10 minutes (or they’ll break) then transfer to a rack (or your mouth).
