Are beans actually good for your heart? Short answer; beans, pulses & legumes get the big tick for our tickers for a few reasons.

They are high in fibre and specifically in forms that help manage cholesterol levels. They are overall rich in minerals like potassium which encourages optimal blood pressure readings. And they are high in protein which we know satiates us & stabilises our blood sugar which both in turn make for content cardiovascular systems.

If you do worry about the windy side of things my advice is start small with your portions, soak your beans & add a dressing with apple cider vinegar to help your digestive system adjust.

Ingredients

  • 1 tin beans of choice or 1 heaped cup of cooked dried beans (or chickpeas/lentils)
  • 1/4 cup sun-dried tomatoes
  • 1 small red onion
  • 1/2 sweet apple
  • 1 lemon
  • 1 tablespoon dried oregano
  • Pinch of salt & lots of pepper
  • 1 tablespoon avocado oil
  • 1/2 tablespoon apple cider vinegar
  • 1-2 celery sticks & their leaves or use fresh mint/parsley
  • 1/4 large cucumber
  • 1-2 grated garlic cloves

Preparation

Slice the onion & add to a bowl with the juice of the lemon, salt & pepper. Mix well & leave to sit whilst you chop the rest of your ingredients into similar size pieces to the beans.

Add everything else to the bowl, toss together with the avocado oil & vinegar then taste & adjust the seasoning if necessary.

It’s best if left to marinate for about 30 mins but can be served straight away.

Will keep in the fridge for 4 days too.
