Spinach & Matcha Waffles

A prime example of the this is our interaction with stimulants - I bang on about it a lot but it’s the crutch versus could take it or leave it situation. My favourite trick is to consume things like matcha or coffee as part of breakfast rather than in advance, as this means the clarity & performance enhancement is slowed, sustained & stable over a longer period.

Ingredients

  • 1.5 cups apple purée
  • 200g spinach
  • 1 teaspoon matcha
  • 2 eggs
  • 1/4 cup cassava flour
  • 1 heaped tablespoon tapioca flour
  • 2 tablespoons cashew milk
  • 1/2 teaspoon bicarbonate of soda

Preparation

Preheat your waffle iron.

Blend all your ingredients together then spoon in 1/4 cup per waffle. Cook for 7-8 minutes until crisp & serve with whatever you fancy, I personally love crushed raspberries, tahini & pumpkin seeds.
