Ingredients

  • 250g walnuts
  • 100g sunflower seeds
  • 50g chia seeds
  • 50g ground flaxseed
  • 50g hemp seeds
  • 100g cacao nibs
  • 350g pitted soft dates
  • 8 figs
  • 100g raisins or prunes
  • 2 tbsp apple puree
  • 50g desiccated coconut
  • optional: 2 tsp of lucuma or maca powder

Preparation

Measure out all your dry ingredients into a large bowl. Add 3/4 of them to a food processor and pulse to combine.

Roughly chop the pitted dates, figs and raisins then add to the processor with the apple puree and blend until a sticky dough is formed.

Tip in the reserved 1/4 of the dry ingredients and quickly pulse a couple of times to combine but not blend smooth.

Line a square dish or brownie tin with baking parchment, add the mix, press it down and smooth the top.

Transfer to the fridge and chill for at least an hour.

Use the parchment to pull the chilled mix out onto a cutting board and using a sharp knife slice into squares or your preferred shape.

Store in an airtight container in the fridge for up to a week or bagged in the freezer for 2 months.
