Pea & Pumpkin Seed Waffles

High protein pea & pumpkin seed savoury waffles with added collagen topped with rocket & avocado.

Do you ever see people adding collagen into everything & wonder why? Do you ever see peas & think they'll make delicious waffles? 

Well, collagen is a structural protein made of amino acids that comprise our connective tissues. Our body prioritises organs & muscles over our skin & hair so these become lacklustre. We also become less efficient at making collagen as we age. So an additional influx bypasses the potential to fall short - it's as simple as that! 

Add it to anything hot or cold, starting with these yummy savour waffles!

Ingredients

  • 1.5 cup frozen peas
  • 1/3 cup each tapioca flour & ground almonds
  • 1/4 cup pumpkin seeds
  • 1 teaspoon bicarbonate of soda
  • 1 heaped tablespoon collagen (I get mine from Bare Biology)
  • 1.5 tablespoons avocado oil
  • TO SERVE - wild rocket, avocado, radishes or your favourites

Preparation

Preheat your waffle iron.

Pour boiling water over your peas to thaw, blend 1 cup to a purée & then add with the remaining 1/2 cup with the rest of your ingredients to a large bowl. Beat to a batter.

Spoon in 1/4 cup per waffle & cook for 7-8 minutes until golden & crisp.

Serve with your chosen adornments!
