Often people tell me that tofu is bland or boring, then a few more will tell me it’s just not something they ever eat. All valid points however, I believe that we totally underestimate this hugely convenient, super cost effective protein & mineral source.

If you know how to use it properly then that potential 'blandness' converts into tofu being the most incredible flavour sponge. This beauty is a brilliant alternative to a pulse based dip, makes a superb sauce & if you're feeling a touch peckish then do join me in grabbing a spoon & diving on in!

Ingredients

  • 300g organic silken tofu
  • 2 cups fresh parsley & coriander
  • 1/2 cup nutritional yeast
  • Large pinch of salt
  • 1 tablespoon smoked garlic powder OR 1-2 crushed garlic cloves
  • 2 tablespoons jalapeño lime sauce (I get mine from Eaten Alive) OR 2 tablespoons lemon juice/apple cider vinegar
  • Fresh chilli to taste

Preparation

Add all the ingredients to a blender. Transfer to a bowl & serve with your choice of side.
