Ingredients

  • 1 large courgette turned into noodles (Use a spiralizer or peeler)
  • 2 eggs
  • 2 heaped tablespoons smashed avocado
  • 4-6 slices of smoke salmon
  • Black pepper
  • TO SERVE - sesame seeds & lemon wedges

Preparation

Preheat your oven to 200°C, line a tray with a silicone mat.

Add your courgette noodles to a dry pan, heat, tossing occasionally, for 3-4 minutes until the water has evaporated off.

Use tongs to create 2 large nests on your lined tray, crack an egg into the centre of each & bake for 8-10 minutes until the eggs are done.

Transfer to plates with your salmon & avocado, add lemon, season & serve!
