Chocolate Chunk Fondant Cake

The ultimate melty centre, chocoliscious to the max, & no one would ever guess it's been made in a health conscious way.

Ingredients

  • 3 eggs
  • 1 cup mashed ripe banana (~2-3 bananas depending on size)
  • 1 teaspoon vanilla powder or extract
  • 1 tablespoon Hunter and Gather coconut oil/butter/ghee
  • 200g + 50g dark chocolate - I use 72 or 90% Ombar Chocolate
  • 50g Amisa Organic buckwheat, brown rice or chestnut flour (or plain flour for non-GF)
  • 1 cup milk of choice - I used cashew
  • 50g Biona Organic coconut sugar
  • 2 tablespoons cacao powder
  • Pinch of salt.

Preparation

Preheat your oven to 160°C, line a brownie tin with parchment.

Melt the 200g chocolate & oil/butter in a bowl. In another bowl mash banana, egg yolks, vanilla, cacao, salt & sugar together, then fold in the flour.

Whip the egg whites until stiff peaks form then gently fold in the banana mix.

Fold through the melted chocolate gently to keep the mix aerated. Decant into your tin & sprinkle with the remaining chocolate cut into chunks.

Bake for 25 minutes if serving straight away - this will give you a molten lava cake centre. Or bake for 30 minutes & leave to cool in the tin then refrigerate. This gives the most insane chocolate fudge consistency.
