Carrot Cake Breakfast Bake

This is my current breakfast obsession!

I often take issue with baked oat things because so many are labelled ‘high protein’ but this protein supposedly comes from a single spoon of yoghurt which is not sufficient protein to balance out the carbohydrate content of those recipes.

This is my solution & if you want to bake a few portions at a time simply scale up the recipe & bake in a casserole dish for 30-35 minutes.

Ingredients

  • 20g rolled oats, 5g ground flaxseed & 1/2 cup water (soaked overnight if possible)
  • 20g protein powder
  • Plenty of cinnamon
  • 1/2 teaspoon bicarbonate of soda
  • 1 egg + 1/4egg white (or another whole egg)
  • 100g grated carrots
  • 1 tablespoon of tahini or favourite nut butter.

Preparation

Mix everything together in an oven proof bowl, then bake or air fry at 210°C for 20 minutes.

Drizzle in tahini or your favourite nut butter and tuck in!
