Butternut Noodle Egg Nests

This is a perfect plate full of healthy fats, fermented foods, protein and some colourful antioxidant-rich fresh veggies.

Ingredients

  • 125g butternut squash noodles
  • 2 large eggs
  • 1/2 avocado
  • 4 cherry tomatoes
  • 3 radishes
  • 1 tablespoon sauerkraut
  • Small handful spinach
  • TO SERVE - dill, lemon juice

Preparation

Preheat your oven to 200°C.

Add the butternut noodles to a sauté pan with 3 tablespoons of water, cover with a lid & steam fry on medium for 5 minutes until tender.

Prepare your plate with the spinach, tomatoes, radishes & sauerkraut.

Using a muffin tin or silicone muffin cups make your noodles into nests & crack an egg into each. Bake for 5 mins until set.

Carefully tip onto your plate, squeeze over the lemon juice & sprinkle with dill.
