Blueberry Jam & Peanut Cookies

Ingredients

  • 2 servings peanut protein powder
  • 1/2 cup ground almonds
  • 1 heaped teaspoon matcha powder
  • 1/2-1 teaspoon almond extract
  • 1 heaped tablespoon nut butter
  • 2 tablespoon apple purée
  • 1/2 cup blueberry (warm in a pan & reduce until sticky for around 6-7 minutes)

Preparation

Preheat your oven to 175°C.

Mix everything except the jam to form a dough, roll into tablespoon sized balls & then flatten in your hand to a disc, add a dollop of jam & roughly fold the edges up. Pop in a tray & gently flatten a bit.

Bake in the centre of the oven for 12-14 minutes until golden, cool on the tray for 5 minutes then transfer to a wire rack to go cold.

Use within 4 days or freeze for up to 3 months.
