Veggie Fried Rice

A quick and easy mid-week meal that really hits the spot. I cook this one on a regular basis and it never disappoints.

Ingredients

  • 2 eggs
  • 1 small bag mixed stir fry vegetables
  • 1/2 cup cottage cheese or crumbled tofu
  • 1/2 pre-cooked rice pouch
  • Juice of 1 lime
  • 1 teaspoon un-toasted sesame oil
  • 1-2 teaspoon soy sauce/tamari
  • Chilli flakes, fresh coriander, chopped cashews or sesame seeds - totally optional!

Preparation

Whisk eggs and cottage cheese/tofu.

Add veggies & rice into a pan with a splash or water and sesame oil to heat through for around 2 minutes.

Push the rice and veggies to one side. If there's leftover liquid let this steam off. Pour in the egg mix, scramble, then toss everything together.

Add lime juice & chilli flakes/coriander if using, & serve!
