Super Pumpkin Hummus

This creamy, dreamy hummus is not just packed with flavour, it's also purposefully composed in a way to maximise on antioxidant uptake (by blending the spices, fresh turmeric, omega 3 & vitamin A rich pumpkin) because every mouthful can & should matter, not in a way that becomes a chore but in a way that celebrates the true magnificence of what nature has to offer.

Ingredients

  • 1 cup cooked pumpkin
  • 400g cooked chickpeas
  • 3cm fresh turmeric
  • 1/2 lemon (grate the zest then just peel & use the flesh)
  • 2 garlic cloves grates
  • 1/2 teaspoon salt
  • 1 teaspoon each ground cumin & black pepper
  • 1 tablespoon tahini
  • 1 1/2 tablespoons Life & Soul omega 3 oil (I get mine from Bare Biology)
  • Ice cold water
  • TO DECORATE - Nigella seeds, extra Life & Soul oil, grated lemon rind & turmeric

Preparation

Add everything except the water & omega oil to a blender & purée until smooth. Keep scraping the sides down to mix everything together well.

Then with the motor running drizzle in the ice cold water & oil until you have a wonderfully whipped texture.

Serve straight away or store in an airtight container & use within 4 days.

It’ll also freeze for up to 3 months.
