Savoury Pancake Stack

Gluten Free Savoury chickpea pancakes, with spring onions, and chipotle.

This recipe is designed to bring the pleasure back into those healthy eating habits.

Ingredients

  • 1 pack chipotle & lime chips (I get mine from Boundless)
  • 1/2 cup chickpea flour
  • 4 eggs
  • 1.5 cups water
  • 3/4 cups sweetcorn
  • 1/2 teaspoon bicarbonate of soda
  • 3 tablespoons apple cider vinegar
  • chopped jalapeños to taste
  • Spring onions
  • 1.5 tablespoon butter/goat butter/ghee/olive oil
  • 1 tablespoon chipotle in adobe (I get mine from The Cool Chile Company)
  • smoked paprika nuts & seeds (I get mine from Boundless)

Preparation

Blitz chips & chickpea flour to a fine flour, add bicarbonate of soda, water & eggs then blend again.

Add sweetcorn & jalapenos. Mix in followed by vinegar.

Heat a frying pan on medium, add heaped tablespoons of batter & cook until flippable. Cook for another minute or so until fluffed up then pop onto a plate in a warm oven whilst you repeat with the rest of the batter.

Mix chipotle paste & melted butter/oil, drizzle, top with the onions, nuts & dive in!.
