Salmon Spring Rolls

I get a huge amount of satisfaction from making people feel better but I think I weirdly get even more joy sometimes when I come up with a way to show that with a bit of creative thinking we can take all those favourite foods (even the ‘unhealthy’ ones) & make them fit if they bring you joy. Which is exactly what these babies exemplify perfectly. Not an oxidised inflammatory fat in sight, super crispy, rich in iodine, omega 3 & generally here to blow you socks off.

Ingredients

  • 125g cooked salmon fillet per person
  • nori sheets
  • watercress
  • spring onions
  • rice paper sheets

Preparation

01

Submerge a sheet of rice paper in hot water to soften, lay half a piece of nori across the centre, add salmon, green things & roll up. Fold the edges in & then repeat with the rest.

Air fry at 210°C for 14-16 minutes, turning halfway.
