Ingredients

  • 1 pack mixed salad leaves
  • 2 cooked beetroot (ready cooked in vacuum pack)
  • 1 fillet poached salmon
  • 100g tenderstem broccoli
  • 1 tablespoon olive oil pesto
  • 1/2 pouch ready cooked quinoa
  • salt & pepper

Preparation

Steam the broccoli.

Add the quinoa, chopped beetroot, & pesto to a bowl. Mix to combine.

Add the broccoli, flake in the salmon, taste & season with salt, pepper, & lemon juice. Tuck in!
