Ingredients

  • 1 sweet potato
  • 1 boiled egg
  • Greens of choice
  • ROMANESCO SAUCE
  • 2 tablespoons tahini or almond butter
  • 1 cup roasted red pepper flesh
  • 2 tablespoon sun dried tomatoes
  • 1 teaspoon smoke paprika
  • 2 garlic cloves
  • 1 tablespoon red wine vinegar
  • Salt & pepper to taste

Preparation

Blend all your ingredients for the sauce until smooth, spoon generously over slices of sweet potato that have been grilled at 210°C for 10 minutes on each side.

Add a boiled egg, greens of choice & you’re good to go!
