Ingredients

  • 300g cherry tomatoes
  • 5-6 sun-dried tomatoes
  • 1 red onion
  • 1 large red pepper
  • 200g tuscan kale
  • 450g firm tofu
  • 1 teaspoon each garlic powder & salt
  • 6-8 grinds fresh black pepper
  • 150g feta or vegan alternative (optional)

Preparation

Preheat your oven to 200°C.

Add tomatoes, sliced pepper, onion, sun-dried tomatoes & seasoning to a casserole dish. Roast for 15 minutes.

Use a wooden spoon to lightly squish the softened vegetables.

Roast for 20 minutes, stirring halfway through.

Crumble your cheese of choice on top & cook for a final 5-6 minutes until melted.
