High-protein cauliflower porridge with nut butter

A high-protein 'porridge' made from your choice of cauliflower or courgette which will keep you fuelled all morning.

Ingredients

  • 1 cup cauliflower rice or grated courgette
  • 1 serving protein powder (equal to 35g protein)
  • 1 cup milk of choice
  • 2 tablespoons psyllium husk/ground flaxseed
  • 1 teaspoon cinnamon
  • 1 tablespoon nut butter or tahini to serve

Preparation

Add milk, vegetables, salt, & spices to a pan. Cook over medium heat with a lid on until the vegetables are softened.

Remove from heat, add protein & husk. Pour into a bowl & top with a nut butter.
