One Pot Creamy Green Pasta

Quick and easy, one pan wonder, creamy green gluten free pasta with courgette, cauliflower, peas and chicken.

This one pan wonder is literally jam packed with veggies, protein & lovely slow burning carbs. It tastes epic & is literally ready from fridge to fork in 40 minutes which includes chopping all your veg!

Ingredients

  • 1 small cauliflower
  • 1 large courgette
  • 1 onion
  • 1.5 cups frozen peas
  • 2-3 chicken breasts
  • 1/2 cup yoghurt of choice
  • 2 cups bone broth
  • 2 tablespoons nutritional yeast
  • 1 heaped teasoon garlic powder
  • Large pinch of salt
  • Plenty of black pepper
  • 1 tablespoon dried oregano
  • 2 cups brown rice fusilli (or you preferred pasta)
  • To serve 1 bunch fresh parsley & the juice of a lemon

Preparation

Add everything to a large shallow pan which has a tight fitting lid.

Mix well, bring to a simmer & cook for 30-35 minutes until the pasta is cooked through.

Leave covered with the heat off for 10 minutes to steam. Then use forks to shred the chicken, add lemon juice, parsley, stir through & serve.
