Green Eggs No Ham

When it comes to speedy nutritious meals, eggs are a fab thing to reach for. You get good quality protein, healthy fats, vitamins, minerals, & specific things like phospholipids which are incredible supportive of cognitive function & the nervous system.

This recipe not only fantastic in terms of supporting a more athletic physique but also what I would advise for more sustained energy throughout the day, better blood sugar regulation etc.

Ingredients

  • 2 large organic eggs
  • 1 large handful kale or cavolo nero
  • 2-3 pieces grilled peppers
  • 1 tablespoon almond milk cheese or 1/2 avocado
  • Pepper & chipotle flakes (optional)

Preparation

Add the sliced peppers & greens to a pan with 1 tbsp water, cover & steam for 1 min.

Crack in the eggs, use a spatula to mix & toss through the veg then spread into an even thickness.

Spoon on the cheese/avocado & season, cover & cook for 1-2 minutes on high then serve!
