When you look at this plate do you see spaghetti & meatballs or a greek salad? Well this hybrid of the two was created on a whim with the help of some lovely falafel and is utterly delicious.

Ingredients

  • Falafels of choice
  • 1 large courgette
  • 1 handful rocket
  • 8 kalamata olives
  • Handful tomatoes
  • 6cm cucumber
  • Nigella seeds
  • DRESSING
  • 1/2 tablespoon tahini
  • 1 tablespoon apple cider vinegar
  • Pinch of salt
  • Splash of water
  • Crushed garlic clove (optional)

Preparation

Mix your dressing & leave to one side.

Spiralise your courgette or use a veg peeler to create noodles. Halve the olives & tomatoes, finely slice the cucumber & toss everything together with the dressing.

Warm the falafel in the oven/ an air fryer for 10 minutes, tumble over the top & grab a fork!
