Creamy Cavolo Nero with Artichokes

Super easy & speedy creamy cavolo nero with artichokes.

When cooking your leafy greens, generally try to stick to swift & speedy as a significant proportion of the nutrients they contain are unstable under heat pressure so a couple of minutes in a steamer and toss through a stir fry is ideal.

Ingredients

  • 1 large handful cavolo nero or cabbage, shredded
  • 1/4 cup artichokes
  • 1 heaped teaspoon chive almond milk cheese (I use Nush Foods but you can use crème frâiche, soft goats or regular if not dairy free)
  • 1 teaspoon lemon juice
  • Freshly ground black pepper
  • 1/4 teaspoon coconut oil

Preparation

Add the coconut oil, shredded greens & 1/4 cup water to a sauté pan. Cover with a lid & steam for 2 minutes.

Meanwhile chop your artichokes then toss through with the cheese, add your lemon, season with pepper & serve!
