Ingredients

  • 2 organic eggs plus 1/4 cup cottage cheese
  • Pinch of salt, plenty of black pepper
  • Small bunch fresh parsley or dill (optional)
  • 1 teaspoon avocado oil or butter
  • Large handful tuscan kale shredded
  • To serve: 1/2 avocado, handful tomatoes, toast or crackers of choice

Preparation

Whisk eggs, cottage cheese, seasoning & chopped herbs.

Add oil to a frying pan, heat on medium, then add the shredded kale with 2 tablespoons of water. Pop a lid on for 2 minutes. Then add egg mixture & scramble as you would regular eggs.

Serve with avocado, halved tomatoes, & toast (optional)
