Carrot and Butterbean Hummus

Often the eternal search for dietary awesomeness leads us down a perilous path of overdoing it & we can be wonderfully gut healthy without being gassy.

You can sub any root vegetable & any pulse into this recipe, just keep the proportions the same and of course play with the spicing if you wish to.

Beetroot, cumin & black beans is another firm favourite.

Ingredients

  • 400g can butterbeans (I buy mine from Biona Organic)
  • 200g steamed carrots
  • 2 tablespoons belazu tahini
  • 1-2 cloves garlic (adjust to your preference)
  • 1 heaped tablespoon belazu oak smoked paprika
  • 1-2 tablespoon raw apple cider vinegar
  • 1 tsp salt, plenty of fresh black pepper

Preparation

Blend everything except the vinegar until smooth. I finely grate in the garlic to avoid chunky bits being missed by the blades.

Then add the vinegar & thin to your desired consistency.

Will keep in the fridge for a week or freeze for up to 3 months. Also works brilliantly as a mash replacement in a main meal.
