This is a super simple and fun take on the classic Thai green curry with your protein of choice. Ready in a matter of minutes!

Ingredients

  • 1/2 tablespoon fresh thai green curry paste
  • 3 tablespoons coconut milk
  • 1 serving rice noodles (the kind you just soak in hot water rather than boil)
  • 1 pre-cooked chicken breast, fillet of salmon, mackerel, or white fish (buy prepared for speed), or 120g tofu/tempeh
  • 1 bag prepared stir fry vegetables
  • 1/2 cup edamame beans
  • lime juice, fresh coriander - optional

Preparation

Soak noodles in hot water for 10 minutes.

In a small pan, add 3/4 cup of water, the coconut milk, curry paste, edamame, miso & 2 handfuls of stir fry vegetables. Bring to a boil then turn off the heat.

Add your protein of choice, cover & leave to sit until the noodles are ready.

Drain the noodles, mix into the broth, add lime, coriander, & serve.
