Sausage Pasta

quick and easy sausage pasta with peas, spinach, and broccoli.

Another quick and easy mid-week meal which is bound to hit the spot. Feel free to substitute any of the ingredients with similar items in your fridge.

Ingredients

  • 1-2 great sausage (I use Swaledale Butchers)
  • 70g preferred pasta
  • 4 broccoli florets
  • 2 tablespoons frozen peas
  • 2 big handfuls spinach, chard, or another soft leafy green
  • Plenty of black pepper
  • Parmesan to serve - optional

Preparation

Put the pasta on the boil as per packet instructions.

Add sausage meat to a frying pan & use a wooden spoon to break up into pieces. Cook on high heat to crisp up.

Add spinach, mix in & turn the heat off.

Add chopped broccoli & peas to the pasta water 1 minute before it's due to be ready.

Drain together then toss with the sausage mix.

Serve with plenty of black pepper & parmesan if using.
