Meatballs with Greek Potatoes & Greens

Serving up a delicious meal doesn't need to be time intensive, it can be speedy as anything & allow you to get on with all the other plate juggling you need to do. Actually simplifying things down & making such speedy choices will probably mean you stick with as opposed to take away because it doesn’t seem such an arduous task after all.

A perfect example being this delicious combo. You can use any mince you like, vary the veg, add herbs, swap what you serve them with etc..

Ingredients

  • 300g mince (I've used chicken)
  • 1 courgette
  • 1.5 heaped tablespoon thai green curry paste
  • 1 bunch cavallo nero
  • 1 large potato
  • 1 tablespoon greek dressing (I get mine form Hunter & Gather)
  • 1/2 cup bone broth

Preparation

Preheat your oven to 200°C.

Chop the potato into chunks, boil for 10 minutes.

Mix meatball ingredients with your hands, seal in a hot dry pan on both sides then bake for 10-12 minutes.

Shred the greens, add to a pan with the broth & cover with a lid. Wilt for 2 minutes, add the cooked potatoes, squish to break roughly & cook down together for 5 minutes. Stir through the dressing & leave to reduce for 2 minutes.

Spoon, serve & dive in!
