Cinnamon & Lucuma Pancakes

As humans we are designed to enjoy sweet flavours, the problem is many over do it. They then feel the need for sweets frequently & intensely, their hormones become unbalanced & their energy fluctuates.

My advice it to always go back to basics, choose fresh fruit, oats, nuts, seeds, coconut, cinnamon, vanilla etc. Always try to combine your naturally sugary options with protein & fats like yoghurt, nut butter, & cacao nibs. Just like this delicious pancake recipe which will revolutionise your Saturday morning.

Ingredients

  • 1/2 heaped cup jumbo gluten free oats
  • 1/2 tablespoon chia seeds
  • 1 teaspoon each Ceylon cinnamon & lucuma powder
  • 2 eggs or 2 flax eggs
  • 1 teaspoon baking powder
  • TO SERVE - Yoghurt, cacao nibs, & a fresh white peach or you favourite fruit

Preparation

Add the oats & chia to a bowl with 1 cup of boiling water. Cover & leave to sit for 10 minutes.

Whisk in the rest of the ingredients & spoon 2 tablespoons of batter per pancake into a hot pan. Cook until bubbles appear, flip & continue to cook until firm to the touch.

Serve adorned with your toppings.
