Celeriac Croquettes

Healthy celeriac croquettes with chicken and chickpeas.

There are two things I can’t abide in life & they are the notion that eating well is in any way dull or unenjoyable, & food waste.

The croquettes are made with totally natural leftover scraps from my fridge & simply air fried until fabulous they are in essence what about; Take great ingredients, switch up your cooking methods & make every mouthful matter.

Ingredients

  • 1 cup leftover celeriac & spring onion mash
  • 2 eggs
  • 1 cup shredded cooked chicken
  • 1 tablespoon psyllium husk or breadcrumbs
  • seasoning (salt, pepper, nutritional yeast, garlic powder, oregano)
  • 2 packs roasted chickpeas (I get mine from Brave Foods)

Preparation

Whisk together mash & eggs then stir through seasonings & chicken.

Add the psyllium, mix & leave to sit for 10 minutes.

Crush the chickpeas to a coarse flour, tip into a large shallow dish.

Roll your mix into croquettes, coat in the chickpeas & air fry at 210°C for 12 minutes.
